I love quick, no-fuss recipe…in fact I call them lazy-fancy. This Red Kuri Squash is just that and perfect way to switch up some traditional flavors on your Thanksgiving table. The squash is born with a ton of flavor, so you can simply roast it with S&P, or add a bit of Evermill Harissa seasoning for an extra kick of spice. This is a great make-ahead-reheat dish. A bit of Salsa Verde goes a long way in my house, once I make a jar, I top everything I’m eating with it for the few days that it lasts. For this recipe I added freshly grated ginger and lime that just sings with the Harissa Roasted Squash.
